Drake's Bay Oysters

Drakes Estero Oyster Beds

Historically and currently, the shellfish species raised in the Drake’s Estero include Pacific Oysters, Kumamoto Oysters, Manila Clams and Purple Hinged Rock Scallops. These shellfish continue to be produced as "singles" and sold live in-shell as well as shucked packed in various sized containers.

The water temperature of Drakes Estero is too cold for the non-native oysters to spawn on their own, so they must be seeded by hand, eliminating the risk of unintended invasion.

The Drakes Bay Oyster Farm produces its own shellfish seed by performing remote setting on-farm. This advanced hatchery technique allows the farm to curtail the purchasing of seed (small shellfish) from producers in other waters and thus the risk of introduction of other contaminates and non-native species.

Activities at this Site

Drake’s Bay Oyster Company's growing area has the finest water quality of any growing area in the state of California, period. These waters contain the only approved growing waters in the state of California. This approved growing area is the only one in the state that is never closed due to potential pathogen spikes following rainfall events. Decades of water sampling have proven this is one of the safest shellfish growing waters on the North American Continent. A deep-water upwelling just off the coast of Drakes Bay provides cool, nutrient- rich water year-round to Drake’s Estero. This clean, nutrient-rich water produces what are recognized as some of the finest oysters in the world.
